This is a huge favorite in our home, it gets requested often and was something our son would always eat when he was small. I never had a great recipe for Swedish meatballs, something was always just not right, then my friend Cecilia (who is from Sweden) was making these one day when our boys were playing together. I watched and learned her recipe which was similar to mine, except that I add nutmeg to my meatballs which she did not add in her recipe that day. What my recipe lacked I found out was the meat I was using. I had been using all ground beef, my friend said to use half ground beef and half lean ground pork. This definitely makes a difference in the recipe.
So below you will find the recipe. I do not have exact amounts as this is one of those recipes that is made with my heart and not my mind. Perhaps it is the Swedish blood running through my veins that is taking over when I prepare this dish. It truly is a comfort for me to make as well as to eat!
Our boys will both be 9 this Summer. Her son on the 23rd of June and my son on July 24th. It is amazing how quickly time flies. When Cecilia showed me this recipe our boys were about 2 years old. Someday we hope to make the trip back to Sweden to visit our friends. I fell in love with the country that my great grandfather came from so many years ago. For now though I will make meatballs.
