Well not very Irish but it is green.
This was a real hit with all the ladies it is my favorite too. This recipe is a combination of several recipes that I have read and tried over the years. I have finally come up with a concoction that tastes the best to me.
Hubby is not a fan of avocados and it seems Expat son is not either... their loss when I make this one. I make it for parties too and many of our friends rave about this recipe.

Guacamole
3-4 avocados ripe
1 tomato, diced small
1 small onion, chopped finely
2 cloves garlic, crushed
Small bunch cilantro (coriander), chopped
1 green chili seeded and chopped finely
Juice of 1 –2 limes or lemon
Salt to taste
Cut the avocados in half and remove the stones. (Set stones aside) Scoop the flesh out of the shells. Put in bowl and mash with fork, or pastry blender, add juice of 1 lime.
Add the finely chopped onion and crushed garlic mix well. Stir in chopped chili, cilantro and tomato. Mix well.
Check the seasoning; add salt and more lime or lemon juice if needed.
Put a couple of the avocado stones on top of the guacamole and cover with plastic wrap chill for 1 hour. Before serving remove the avocado stone.
The stone will keep the guacamole from turning
brown.
