Salmon Bake - Northwest Indian Style

We had some of our friends over this weekend for a Northwest Indian Style Salmon Bake. We have done this before a couple of times, and decided it was time to do it again since it has been a few years since we have done a Salmon Bake. It is a relatively easy way to cook the salmon and it is delicious prepared in this way with a dry rub type of brine, that is rinsed off the fish before barbecuing.
The recipe is from Sunset magazine about 10 years ago, and the instructions are quite clear.

One year for our Anniversary Hubby and I went on a Sternwheeler boat ride in the Columbia River Gorge and included was a dinner with the Salmon cooked in this manner. It was a memorable experience and it was a delightful meal all those years ago.

Pizza on the barbie

The last few weekends we have been doing pizza on the BBQ. It's a nice meal on a lazy Saturday or Sunday afternoon. If we do it late enough in the afternoon I don't need to worry about making dinner. Even if we do it early there is usually leftovers that can be warmed up later. I have been experimenting with different dough recipes, so far I have not found the perfect recipe so no recipe today. The search is still on... The problem I have is some are too stiff and others are just too tender.

We put what we want on our pizzas the sky is the limit! For the boys GZ Expat and Expat Son they like meat and cheese. For me it was about the veggies.

Nappa Cabbage Salad

This salad was introduced to me by my friend Janine it is easy to make and very delicious with the sweet and sour soy dressing. It goes well with barbecued meats and we have had it with fish as well. You could even put cooked chicken in it and you would have a tasty meal in a bowl for those hot summer evenings you just don't want to cook.

I did change the recipe in that I cut back on the oil as it was a huge amount.

Prime Rib Dinner

  The weekend Bar B Que is usually supervised by GZ Expat.  He usually starts the day asking what we are having for dinner and when I reply, 'I hadn't planned on it,' he usually removes a large piece of meat from the freezer.

This rib roast was one that he did on the BBQ.  Very simple rub and easy to cook on our small Weber kettle grill.  You can easily do this on any outdoor grill that you can cover. 

I served this with simple steamed carrots and Potato Salad with Capers and Olives
