Ahogadas - Real Mexican Food

The Hot Chilies had a guest teach us how to make REAL Mexican food for our last class. Of course the food was awesome and we had a great time as always!  One of the recipes was called Ahogadas which means drowning, we were told that it is food that people eat after having too much to drink the night before. I can see why you would want to eat this as it is filling and also gives your body some nice spice to deal with after a night of say too many Tequila straight shots and Margaritas, my personal favorites.

Thanks to our friend Veronica that took time out of her busy schedule to teach us a little bit of her culture and her food.

Ahogadas below...... A great hangover cure, or a great meal in itself with a side of Frijoles.

Ahogadas

Pork that has a little bit of fat

Water

Salt
Cook in pressure cooker, shred meat. (If you don’t have a pressure cooker you can cook the pork in a pot.)

Cooked Salsa

250 ml water

½ onion

3 tomatoes

2 tsp salt

1 clove garlic

2 Chili fresh or 3 dried arbol chilies

Cook boil for 20-30 minutes, and then blend in the blender.

Ahogadas Salsa

40 dry Chilies (Arbol Chilies)

½ onion

Put in pot fill with water half way, boil until the water is gone. Then blend in blender, after blending return to pot with the following:

1 ½” piece of ginger

Pepper

Oregano

Vinegar (White)

Salt

Boil and then blend again.


Ciabatta  store bought or homemade

 

To assemble Ahogadas

 

Warm Ciabatta

Put pork inside ciabatta, spoon Cooked Salsa on top and inside of Ahogadas

Put some Ahogadas Salsa insideand on top if you want. Very spicy and Yummy!

Can also put chopped onion inside.

This is a knife and fork sandwich as you have drowned the pork sandwich in Salsa!
